Lobster Omelet and Fried Potatoes

Started the day off with a couple hours researching the area. Took a nice swim. Then made a lobster and cheese omelet with fried potatoes for my friends and I. Fresh lobster can be caught right off the island or purchased from the local fisherman. Tonight, we will have fresh fish with cabbage slaw. Ceferino picked some fresh mango’s from Bo’s place yesterday. They will make a nice sweet salsa with the red tomatoes here.

The water has the brightest aqua marina blue color today. The corals are full of life. My favorite morning swim is from the beach to the next Cay and back. Life is good!

Clark’s Cay

Stepped out my door and right into the Caribbean water this morning. The wind is steady today, so I’ll swim and snorkel more today than kayaking after dinner when the waves have less of a white cap. For breakfast, I enjoyed oatmeal with nuts and fresh pineapple.

Lunch will be Lobster salad and fresh salsa. The plan today is to walk the grounds and cut back some of the vegetation that covers the low walking wall that circles the island. I will also measure the walk to track the number of miles I walk each day. I am predicting that 3 rounds will be a mile.

Looking forward to hosting all of you here on the island next year. Start sending me your vacation dates and it is first come, first booked!
